What's in a name????

I have exciting summer plans to open a restaurant of sorts on the West Cork Irish-speaking island of Cape Clear. It all came about unexpectedly (and organically, ha-ha!), when I applied for a job to cook in and manage a restaurant and bar on the island. The owner sent a reply to my e-mail saying that there were actually two options...

Firstly, I could work for them in the one bar, or secondly, I could work for myself in the other bar they owned. Naturally, I was very intrigued by the second offer, as I had been plotting and planning and dreaming for years of having a business of my own. I had made several attempts and done much research, but nothing ever came to fruition.
Last summer, I spent running and baking in the Tearooms at the Burren Perfumery, which I found stimulating, and a pleasure, especially as we were busy for a good chunk of the season, and that was due, I think to the location, friendly service, warm hospitality, and the good tasty natural fare we served. We also noticed that many of our customers came back regularly, despite the fact that the tearooms were a good half hour's drive from anywhere. I knew if I could recreate a similar ambience in a another way-out scenic spot in West Cork, I might too, have a bumper season, or a good start at least...
So here's hoping we will be able to welcome you to An Cistin at some stage over the summer (we will open in May until the end of September)
